Wine which bubbles when poured into a glass an important and growing category of wine. Sparkling wine may vary in as many respects as still wine, but unlike still wines sparkling wines also vary in fizziness. Not just in the actual pressure under the gas dissolved in the wine, but also apparently in the character of the foam. Some sparkling wines froth aggressively in the mouth while others bubble subtly. The most common methods of achieving the still wine to sparkle are Traditional method, Transversage, Transfer method, Continuous method, Charmant process and Carbonation. A host of fine, very individual sparkling wine is made usin the traditional method but with non-champagne grapes, however. The most prodigious example of this is Cava, the sparkling wine so popular with the Spanish.
